Ingredients
  

  • 1 ripe Avocados Peeled and pitted
  • 1/2 cup Fresh basil leaves Original
  • 1/4 cup Pine nuts or walnuts
  • 2 Garlic cloves
  • 1/4 cup Parmesan cheese (skip or use vegan cheese for a vegan option)
  • 3 tablespoons Extra-virgin olive oil
  • 1 tablespoon Fresh lemon juice
  • Salt and pepper to taste
  • 1 lb (450g) pasta of your choice (spaghetti, fettuccine, or penne work well)

Instructions
 

  • In a large pot, bring water to a boil and cook the pasta according to the package instructions until al dente. Drain the pasta in a colander and set it aside.
  • While the pasta cooks, prepare the avocado sauce. In a blender or food processor, combine the ripe avocados, basil leaves, pine nuts (or walnuts), garlic cloves, grated Parmesan cheese, olive oil, and fresh lemon juice.
  • Blend the ingredients until you achieve a smooth and creamy consistency. If the sauce appears too thick, you can add a splash of water to reach your desired texture.
  • Season the sauce with salt and pepper to taste, adjusting the flavors as needed.
  • Toss the cooked pasta with the avocado sauce until it's evenly coated. If the sauce thickens too much while waiting for the pasta, you can add a little pasta water to loosen it up.
  • Allow the pasta to rest for about 5 minutes, giving the flavors time to meld.
