Recipe Roasted Potatoes

There is a roasted potato dish for everyone, whether you like them with aromatic herbs and spices, tossed with tangy and zesty dressings, or piled high with cheese and bacon.

Ingredients
  

  • 2 pnds (900g) potatoes (such as russet or Yukon Gold), washed and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with oil to prevent sticking.
  • In a large bowl, combine the olive oil, dried thyme, rosemary, oregano, garlic powder, onion powder, paprika, salt, and pepper. Mix well to create the herb-infused oil.
  • Add the cubed potatoes to the bowl with the herb-infused oil. Toss the potatoes until they are evenly coated with the herb mixture.
  • Spread the coated potatoes in a single layer on the prepared baking sheet. Make sure they are not overcrowded, allowing them to roast evenly and get crispy.
  • Place the baking sheet in the preheated oven and roast the potatoes for 30-35 minutes or until they are golden brown and crispy on the outside, and tender on the inside. You may want to flip the potatoes halfway through to ensure even cooking.
  • Once the potatoes are roasted to perfection, remove them from the oven and transfer them to a serving dish. Garnish with chopped fresh parsley for an extra touch of flavor and color.
